A latté is a coffee made with foamed, steamed milk with shots of espresso added. To make a good latté:
- Pour your milk into your desired mug until you have about 1.5 inches below the rim then transfer the milk to a steel steaming jug
- Bring the steam wand up to pressure and ensure steam and not water is flowing before putting it into your milk
- Hold the tip of the steaming wand just below the surface of the milk for a couple of seconds to form very fine air bubbles - you'll hear the tone of the steam change
- Move the wand lower into the steam and slowly pass the jug up and down in the milk until the milk reaches between 65-70°
- Pour the milk into the mug again - you should have around half a cm space left now (if you're adding flavoured syrups, do this now)
- Place the mug under the bar and dispense a single shot of espresso through the foam on the top (if you're making a double-shot latté, use slightly less milk)
- Take the mug out from the machine, clean the wand and dust with chocolate powder
